La Serrania is the new Decaf (Dutch)


Bijna geen enkele van de espresso bars die we beleveren heeft interesse in onze decaf koffie. Begrijpelijk want het publiek in deze plaatsen vraagt er ook niet naar. 1 van de redenen is omdat onze koffie's veelal weinig cafeïne bevatten. Een andere is de jonge leeftijd van vele bezoekers. Dit maakt dat ze nog goed de cafeïne verdragen en dikwijls ook niet zo vroeg willen gaan slapen. (dit is inderdaad ook een halve grap)

Te Caffenation hebben we altijd de ambitie gehad om alle koffieliefhebbers gelukkig te stemmen en dus ook diegenen die gevoelig zijn aan cafeïne.
En met de La Serrania gaan we hen zeker gelukkig maken, maar niet alleen de cafeïnehaters. Deze koffie is echt top en moet zeker niet onderdoen voor een andere boon. Deze week verstuurden we zelfs 50 zakjes naar online abonnees, als filter van de week. En met rede. Mooie balans, fruitige toetsen, lekker zuurtje en zeker clean genoeg om eenieder blij te maken.

Ja, je leest het goed; de filterkoffie van deze week bevat geen cafeïne.
Misschien een beetje verrassend en voor sommige met angst om het hart, maar je zal zien, na je eerste kopje, dat ook cafeïnevrije koffie heel lekker smaken kan.

Mensen iets bijleren over koffie en koffiegeschiedenis schrijven zijn altijd doelen voor ons geweest. En deze weekkoffie is er eentje die uniek is in ons Belgenland. Bijna al de aangeboden decafs zijn heel goedkope bonen die in een speciaal bedrijf met benzeen van cafeïne ontdaan worden. Het resultaat is meestal ondrinkbaar.
Ofwel gaat men grondiger te werk en neemt met een bepaalde boon en decafeïneert via de Zwitserse watermethode. Dit hebben we de voorbije 3,5 jaar gedaan, en dit was wel drinkbaar.
De La Serrania is een zorgvuldig uitgekozen blend van koffie's van verschillende boeren in Huila. Onze locale partner Virmax zendt dan deze bonen naar Manizales waar ze met bergwater en natuurlijk bekomen ethylacetaat (zoals bij wijnen) gedecafeïneerd worden.
Zo blijven de karakteristieke smaken bewaard en resulteert het vandaag in een clean cup die tijdens bepaalde blindproeverijen zelfs de tafel kon winnen tegenover vele andere dure Specialty Coffees!!
De donkerdere kleur heeft geen smaakinvloed.

Online Membership coffee Feb 12 : PNG Kimel (Dutch)

Papua New Guinea Kimel Estate.
Heel lang geleden dat we nog eens een koffie uit Papua New Guinea vinden die ons aanstaat. En dan nog een Peaberry, of zo'n rond boontje. De meeste koffiebessen bevatten 2 boontjes die tegen mekaar aan gedrukt zijn en daarom een platte kant hebben. De Peaberry of Caricoli daarentegen zit alleen in de bes en heeft daarom geen platte kant.
Meestal vindt dit natuurkundig fenomeen plaats in de besjes op het einde van de tak. Hier is er minder waterdoorvoer en daardoor zijn de boontjes meestal klein. Deze Peaberry echter is van gemiddelde grootte, screen size 16.
De reden dat wij dikwijls proberen het Peaberry (PB) lot vast te krijgen is omdat deze iets langer vers blijft en ook net iets krachtiger en minder scherp smaakt; een serieus voordeel bij voornamelijk espressobereidingen. Een extra bonus is de soms lagere aankoopprijs; de meeste koffiebranders vinden de Peaberry er niet mooi uitzien in hun melange. De meeste traditionele 'meesterbranders' zijn evenzeer 'meestermelangeurs', maar wij zouden het doodzonde vinden om zulk een mooi boontje te gaan vermengen en bieden ze dus als 'Single Estate' aan.

De Kimel Estate is een redelijk grote plantage, oorspronkelijk opgestart door Australiërs, maar nu in bezit en uitgebaat door lokale inboorlingen die de traditionele eigendommen van de streek opeisen.
Het is gelegen in de Wahgi vallei, nabij Mount Hagen in de Western Highlands Province.

Opvallende aciditeit voor een koffie uit dit werelddeel. Doet me denken aan aciditeit van een Riesling wijn, inclusief het florale aspect.
Verder medium body en naar het einde toe veel chocolade en zelfs Meditteraanse kruiden. Een zeer complexe en levendige kop dus.

Deze week Exclusief voor Abonnees : KONGA!!!


Abo - Ethiopia Konga Unwashed Yirgacheffe. Roasted 30 Jan.

We kochten deze koffie via de meest gespecialiseerde Direct Trader van Ethiopische bonen, het Nederlandse Trabocca.
De koffie werd 2 weken geleden op de Barista Kampioenschappen gebruikt door Valentine. Zij is een sinds een kleine 2 jaar werkzaam te Labath Gent. Ze haalde het hoogste aantal punten van de 15 Barista's en zal einde april, samen met 'onze' Vincent strijden voor de titel van Belgisch Beste Barista.

Een bom op espresso, maar ook op filter zeer uniek.
Het lot komt van de Konga Cooperative en is hoogst waarschijnlijk onze meest spectaculaire Ethiopische koffie ooit.
Zoals altijd in Ethiopië is dit een mix van diverse 'Heirloom' variëteiten.
De besjes werden met de hand gepikt wanneer ze op zijn rijpst waren en daarna op een natuurlijk wijze bewerkt. De 'Dry Processing method' houdt in dat de volledige bes in de zon te drogen wordt gelegd om er dan later het vruchtvlees en het vlies af te halen, in één ruk. De techniek is vooral nadelig omdat bij de normale 'Wet Processing' de koffie eerst in het water gaat en er zo al vele slechte (onrijpe of foutieve) bonen van de goede gescheiden worden. Bij 'Dry Processed' wordt deze scheiding puur visueel gedaan. Dit betekent dat er vrij veel 'afval' in de uiteindelijke branding komt en wij heel veel werk hebben er er die later ook nog eens, zo goed en slecht als het gaat, uit te pikken, maar de cup is zo zoet en vol met fruit dat al dit werk de moeite loont.

A Cherry bomb deze koffie. De lichte walm van een mestvaal zal sommigen onder jullie zeker tegen de borst stoten, maar het is net dit beestiale karakter dat de koffie zo populair maakt.
Gedroogd fruit, een siropige body, volle mond en vooral heeeel fruitig! Goede moed. Rob

New Filter for online members : Zimbabwe (Dutch)

Heel fier dat we de Pezuru opnieuw binnen hebben. De derde winter nu dat we zelf branden en voor de 3de keer dat de Pezuru de revue passeert. Telkens de AA selectie, en ze hebben ginder niet stil gezeten de laatste jaren. Elk jaar wordt de koffie wat cleaner, en met onze nieuwste Caffenation Filter Roast Profiles, krijgen we nog diepere smaken en vooral een heel vol en zachter mondgevoel.

We hebben ook mooi fruit hier. Ik proefde vooral perzik en peer, maar het deed me ook wat denken aan Elixir D'Anvers. Die zitten hier om de hoek en ik zou er een van de dagen misschien eens een pakje moeten binnen gooien. 
Veel drinkplezier en hieronder nog een beetje meer info over deze zeldzame maar prachtige koffie :

De Pezuru komt van 3 boerderijen die in 1955 zijn beginnen planten, in hoogte variërend tussen 1000 en 1100 meter. Dit is verrassend laag, maar wel heel zuidelijk, en zo krijg je toch vergelijkbare klimatologische omstandigheden als de hoger geleden Lupili koffie's, in het noorden.

De koffie is niet 'shade grown'. Deze methode werkt niet in deze Zuidelijke gebieden; met sterker wisselende seizoenstemperaturen en korte winterdagen is de zon onmisbaar. 
De grond is een combinatie van zand, slib en klei.
De variëteiten zijn die van verschillende Catimor, met een klein percentage (10%) SL28.

Ze volgen hier een rotatieprogramma waarin ze elke 7/8 jaar herplant en stekken bijsteekt; wat betekent dat er dikwijls heel 'jonge' koffie geplukt wordt en er zo vrij weinig ziektes op de planten zitten.

De oogst start in mei, met nog een laatste stukje 'fly crop' zo rond eind september.
De koffie gaat na de pluk, gepulpt en gewassen worden en dan in 'parchment' voor een week of zes, voordat ook het laatste 'jasje' er van af gehaald wordt. 

De koffie worden allemaal 'handgepikt', en enkel de rijpste bessen mogen de mand in. Dit vraagt extra tijd en geld, want zo gaan ze toch tot 10x terug om 1 boom helemaal geplukt te krijgen. Maar zo krijg je een smashing 85% top grade retour. En dat proef je!!

Filter week Online Sidamo (Dutch)

Mensen die niet gek zijn van Ethiopische koffie's, hebben het zwaar als ze bij ons komen koffie drinken.
Dit gezegd zijnde lijkt het me echter vrij contradictorisch; koffie en Ethiopië worden immers heel dikwijls met dezelfde adem uitgesproken en daar is reden voor.


De plaats waar het allemaal begon heeft duizenden verschillende bonen en smaken en het is dan ook niet verwonderlijk dat we er af en toe eentje uitpikken.

Deze Fair Trade Certified koffie hebben we op kop weten tikken bij Inter America in Hamburg. Zij werken veel samen met de Oromia Coop en deze Sidamo is de beste Sidamo die we in 2012 hebben mogen proeven en nog altijd op smaak zo laat in het seizoen.


Ethiopië is en blijft wel een arm land en veel van de boeren leven een vrij traditionele levensstijl, dikwijls boerend op kleine percelen en wonend in hutten zonder elektriciteit, lopend water en toilet. De Oromia Coffee Farmers Cooperative Union (OCFCU) probeert deze mensen bij te staan en hun een minimum faire prijs voor de koffie's te garanderen.

Deze extreem 'high elevation-grown' bio coffee is heel verfrissend met zijn vrij heldere aciditeit. Een fruitige koffie (ik proef framboos) met bloemige noten, waarin ze precies wat groene thee bij gedaan hebben. De Sencha overheerst vrij sterk, maar dat maakt de koffie ook zo uniek.

Postal Membership : This Week Malawi AAA

This coffee is grown near the town of Namadzi in the southern Highlands of Malawi, an area better known for producing world class teas. Coffee has been grown here only since the early 1980′s, but with increasing sophistication. The coffee trees, consisting mainly of Catimor and to a lesser extent SL 28 varietals, grow in clay loam at between 3400 to 3800 feet above sea level. The coffee farms all maintain programs to subsidize the cost of housing, health care and education for workers and their families.
Planting coffee is also a soil conservation measure in these areas, where erosion is a widespread problem, as the bushes are planted in contour lines therefore controlling run-off and reducing soil loss. Coffee is mainly planted by smallholders, so it is often inter-cropped with other species in order to supply food to the household. Recently some farmers have started to plant macadamia trees, which can constitute another lucrative income source.
Cherries are harvested at dawn and brought to pulperies before early afternoon. Careful washing and grading is carried out on the same day before the wet parchment settles into separate fermenting tanks. Interesting to note that this Coffee (as with most coffee from Malwi) is transported through Mozambique for shipment from Port of Beira on the Indian Ocean.


What do we taste : Typical Eastern African Touch, Swedish Cinnamon Rolls, Little hint of Lemon Grass and Pine Nuts.

A vibrant and smooth bodied cup.

1) Cup Of Excellence is an organisation who's on the research of the 'perfect' bean and auctions every year the best lots in 11 different country's. This movement is very important to stimulate coffee farmers and cooperatives to improve their coffee and via this program raise the price to a more-than-fair level. For Mexico it was the first year they entered the competition and we scored a part of lot #5.

2) The farmer Agustin lives in Veracruz and began cultivating coffee 20 years ago. They renovated almost all the coffee plantation and began planting in grafted coffee that are more resistant to nematodes, 6 years ago.

3) We haven't been happy with the offer of Mexican beans in the past. Mostly to the specific climat (Mexican is most Northern of all American coffee producing country's) the average bean has a very flat and boring taste.

4) But not this one; here we a Panamesque full flavored cup with some florals, hints of stone fruit and an elegant chocolate touch. Enjoy!

Filter Week : Rwanda Vunga

Vunga cooperative is a washing station (coffee mill) in Jomba, Nyabihu, Western Rwanda and named after the nearby village. The Vunga station is at 1463 meters, with coffee coming from the surrounding hills ranging from 1700 to 2100 meters. The area borders the Virunga national forest, which has a healthy mountain gorilla population, and is just a couple hours from the borders of Uganda and DRC (Congo).
This area features rugged terrain with steep hills and deep misty valleys, which provide a natural water resource. The Virunga mountain range, which consists of eight major
volcanoes, is a branch of the Albertine Rift, also known as the Western Rift Valley which spreads over Rwanda, Uganda and DRC. The name “Virunga” comes from the Kinyarwanda word ibirunga, meaning “mountains.”

The Rwanda are early this year.
And this one is not only our base for the Little Green Bag, it's also our stunning filter of the week.

A spectacular Autumn coffee that taste like a lot of seasonal veggies : bitter carrots, asperges and nuts.
The cup is clean and has enough acidity to give it a balanced profile till the last drip.

Voor filterbereidingen is mijn favoriete overzeese land wellicht Costa Rica. Voornamelijk de helderheid/brightness van de boon is heel apart, en verslavend.

Filter van de Week : Panama Don Pepe

Founded in 1899 by Don Enrique Vásquez, Don Pepe is a fourth generation coffee farm and a former Best of Panama winner. Perched high on the slopes of Baru Volcano, Don Pepe is located in Volcancito, a micro-region within Panama's celebrated Boquete growing region.

After picking, skin and mucilage is removed using Penagos machinery before the coffee is dried. First part of the drying happens at cement patios and finished using raised beds with a mesh bottom - allowing air to circulate freely around the coffee. The coffee is of the Typica variety - one of the main cultivars of Coffea Arabica, whom many other varieties have derived from. The yield is pretty low, but the cup quality rewarding.

Geuren en smaken :
De versgemalen koffie geurt bijna als vers gezaagd hout.
En ook in de smaak komt iets van (zoet)hout omhoog.
We merken dadelijk waarom deze koffie bij ons voor 95% als espresso (LGB) gebrand wordt : vrij krachtig en een lage aciditeit. Toetsen ook van colanoten.


Best Brewed hot enough to enhance the acidity : 93-96°c.

Filter of the Week : Panama Lerida





ROAST 1 OKTOBER 2012 : PANAMA BOUQUETE LERIDA NATURAL CATURRA
De eerste van 2 mooie Bouquete koffie's die we in september binnen kregen.
Panama is 'on the rise' en zowel de Don Pepe als de Lerida farm is daar een mooi voorbeeld van.
Deze koffie is dankzij zijn Natural Processing enorm fruitig. Volop Framboos & Mandarijn, maar ook mooie kruidigheid (lichte cayenne zelfs) en een toets van Jasmijn thee op het tipje van de tong.

Situated in the Highlands of Boquete, Panama, at an altitude of 1600 to 1800 meters above sea level, on the foothills of the Baru Volcano, the quality of this special coffee takes advantage of the deep volcanic soil, the micro-climate (abundant rain and sunny, dry and windy during harvesting season) and its varieties (Caturra and Catuai). The Caturra variety is a mutation of Bourbon coffee discovered in Brazil
while the latter is a semi-dwarf Arabica whose cherries hold solidly to the tree.
The Lérida Estate was founded in 1922 by a retired Norvegian, Toleff Boche Mönniche. Not only did he establish one of the finest coffee farms in Panama, he also had a great interest in the preservation of nature.  Therefore, he made sure that 60% of the Finca Lérida is an ecological reserve.

Caffenation Online : the Filter/Press Memberships


Since years I'm working on this project/online shop.
There were a couple of reasons to postpone it all the time, but finally we've landed. Or almost.
Still a couple of 'stars' and links to be 'glued' into the sites of course, but the ball is rolling.

And it's a nice ball game. Most of things i've been doing in my life came out of passion and love, and so is this project.

What reasons are good to subcribe online?

Although people won't believe that i'm very often afraid of entering a bar/shop/restaurant ; it's the truth though. And many more people are so; they definitely want to share the atmosphere we, or our dealers, are creating, but there's a threshold, something they are afraid off.
But with a membership that gets the coffee at their doorstep, or even better, directly into their house..... That's a good reason to stop buying supermarket stuff!

Some people don't have time to visit a bar or specialised shop to buy a bag of fresh stuff.

Some people are living abroad, far away from Specialty Coffee.

Some are too busy to leave the office or have a big house hold to cover.

Some people are not interested in fresh coffee with a story.
Or am i mistaken?

Of course some people do not trust us and don't want to subscribe. Or they don't know what the difference between Specialty coffee and the average stuff is. Or they don't have a grinder. Maybe they even think (pre)ground coffee is as good.....

For those who don't trust us : we're on the market for +9 years and focus number 1 in all those years was giving people a good time and a good cup. We're not a money driven company!

Very often people see our prices and since we're cheaper then most of the competition, they think we're not as good. Of course I'm not saying we're the best! I don't like company's who scream out that they have perfect roasts and the best beans. We try to do our best. We try to do better. For achieving these goals, me and my people are travelling the world. We're on a continious look out for all movements happening in this crazy coffee world.

Afraid for what's going to be in the bag?
Don't.

Besides all trends and fashion statements, we want to keep our buds sharp and inform you about all our tastings.
With every envelop we send out, we attach a paper with information about the bean and its taste notes.
After 26 weeks you'll have a minimum of 20 different specialty coffees at your doorstep. Coffee is a colorfull world, with African beans the most colorful. :-)

Why whole beans?
We can go on discussing about differences in personal taste, roasting angles and origins, but nobody will argue that pre ground is as tasty as freshly ground.
Whole beans probably loose most of their flavor after one month. Ground coffee looses most of its flavor in 2 days. This doesn't mean the coffee is not 'good' anymore, but you tend to loose the details and for me that's not 'good enough' anymore. So, whole beans it is.
I remember a 'traditional' roaster once telling me that I would ignore 99% of the market this way. Well, if that's the truth; I'm not interested in 99% of the market. Or better; I'm hoping I can motivate some people within this 99% group to start grinding on demand. Brew by brew.
Yes you'll have to make an effort!
Yes, you'll be rewarded!

For the first 50 half year members we offer a free hand grinder. Later on we'll start selling hand grinders for low prices; this way we hope to help people experience the freshest (filter/press) coffee of their life. Maybe even the best (filter/press) coffee of their life.:-)

'In Season' means single-origin beans, which are no older than 10 months from the completion of the harvest. You'll taste the difference between fresh or old crop. (probably we dare to make exceptions for Ethiopian, Kenyan or Vac Packed beans)  




'Light Roast'  means Sweeter, with great balance in acid, aroma and complexity, but still with enough body.
These roasts also give a longer shelf life, although we hope your bag is empty every week. :-)

'Freshly Roasted' : not only we like freshly ground; most coffees will get to your doorstep within a couple days after roasting.

'Specialty Coffee' : what's specialty and what's not? Tough one. For me 'Specialty Coffee' is coffee with a story, with something exceptional, not conventional, as clean as possible, gourmet, premium, +80 points coffees (cupped on a 100 points scale).

'Coffee with a Story' : attached to the coffee you'll find a paper with some info about the bean, origin, country and taste.

'Correct Brewing' : on the envelop or at the blog or later on our specialised slow coffee web site, you'll find brewing advise. The coffee will only taste as good as how you prepare it. Still have some questions; don't hesitate to ask us or one of our specialised dealers.

'Local' : the roasted coffee comes from Antwerp. Taking note this membership is only for Belgium (and later on The Netherlands), this means local. Not from a factory far away. Not flown over with an airplane, which is a real 'killer' for your coffee.

'Micro Roast' : all these coffees are roasted on a 15 kilo roaster, in which we roast 12 kilo at a time. We believe this small scale roasting gives us deeper flavors. Yes, we are small, artisan, and focused on quality.

First a little explanation of the coffee that went out to the first members this week :
The Costa Rica Tarrazu San Rafael :

Due south of San José you will find the majestic mountains of Tarrazú. Sheltered between the Pacific Coast, the Central Valley and the high peaks of the country´s central mountain range, Tarrazú is one of the world's most famous coffee growing regions. This magnificent area, fondly known as the Area of the Saints, is considered to yield the most superb Strictly Hard Bean coffees in Costa Rica, grown at altitudes between 3,650 to 5,900 feet.
The rich volcanic soil, the high altitude, as well as the perfect combination of sunlight, temperature, and precipitation provide the essential components to produce an exceptional coffee.
International cuppers have recognized San Rafael RZ Tarrazú during its 150 years of existence as the best coffee of the Tarrazú region. This cup exemplifies a true Tarrazú with its deep aroma, vibrant and lemony acidity and smooth finish.
Special varieties or types : Caturra, Catuai

What do we taste :
Zoethout - liquorice
Lichte runderbouillon - light beef broth
Medium acidity
Heldere cup - bright cup

We ran out of my favourite Rwanda coffee and replaced it by a new crop Ethiopia Yirgacheffe, meanwhile updosing our Indonesian part a bit.

Grand Ma's Filter Brewer


In bought some very old filters a while ago.
The ones that my grand mother used between WW I and II. (joking).
No, it's very old silver ware from Durobor. This company is still producing all kind of glasses, but no coffee filters sets anymore.
The one that comes closest is the 'Filtre Belgique' from Bodum. And that's the one I want to start selling at our online shop.

In general I'm not so found of filter coffee. It's lacking detail and complexity, but these flat filters do better.
It does not need more than 5 grams of coffee, so very economic. The grind is medium.
Then you pour over a bit hot water (plus minus 90 degrees) to let the coffee bloom for half a minute. Then you fill up the filter. The trick is to get a very slow drip. I try to stretch it all up to 3 minutes and then you get this full strong detailed taste.

The advantages compared to conical filters : It drips slower, what gives more taste. You don't need a filter, which is not only cheaper in product ; you don't need to rinse the paper filter before brewing either. The pouring technique is easier. You need less coffee.

The advantages compared to the French Press : It's cheaper. It's easier. With the press you have the big disadvantage you press through all bad elements of your ground, with the filter .... you filter it.

Single Origin Coffee


With regards to coffee, the term Single Origins means pure unblended coffee, originated from a single growing region.
Similar to wine, single origin coffees are shaped by plant variety, soil type and altitude and vary greatly in taste from region to region.

Now at Caffenation we sell two Brazilian Single Origins, two Ethiopians, one Papua New Guinea, one Guatemala and varying from week to week a Single Origin Roast of the Week.
This range of Single Origins is probably the one to start with when the Caffenation online shop opens next month.
